Gourmet House Caviar is certified BRC, ISO 22000 HACCP, EU and FDA approved for US market.
CITIES
We are an active member of the CITES organization on International Trade in Endangered Species).
Since 1998, sturgeon has been listed as an endangered species by the Washington Convention. Due to overfishing and interference in their natural habitat, the decline in the sturgeon population noticeably decreased, and in 2006 the worldwide trade of wild caviar became illegal.
Traceability
We understand the importance of traceability, so we ensure that each of our tins are labelled properly with an identification code. This code confirms that the caviar originates from legal breeding facilities and informs you about sturgeon type, origin, year of production, and producer or repacking plant.

Farming Sturgeon
Gourmet House Caviar gives its sturgeons the time necessary to produce the best caviar possible. Our farms are equipped with the most technologically advanced system in the world, allowing us the ability to simulate the sturgeon’s natural environment.

As the sturgeon starts to reach peak maturity, our technicians undertake an ultrasound scan to determine the precise moment for extraction. In a strictly hygienic and refrigerated environment, the membrane containing eggs are collected and sieved to carefully remove the eggs. The eggs are sorted according to their texture, size and colour. We assess the caviar to ensure it meets our high standards, from grain size to firmness and taste.
The Caviar Process
In a strictly hygienic and refrigerated environment, the "gonads" (membrane containing eggs) are collected and sieved to carefully remove the eggs. The eggs are sorted according to their size and color. Then comes the salting, supervised by one of the most famous caviar masters, Mr. Toufani. For the final stage, the caviar is packed in mother tins. By merging innovation and tradition, mastering the complete process of production, guaranteeing the highest quality, availability, and palatability.
Tasting

Pairing
On its own, caviar is divine, but it can also be served on blinis or potato. To accompany this delicacy, pair with extra brut champagne, dry white wine. Icy cold vodka o r even with specific dry beers.

Malossol, a Russian word for lightly salted caviar, is a unique type of caviar that is focused on refined natural flavours and therefore contains lower salt contents. A perfect choice for caviar beginners.
